Over the past decades of my life as a vegan, I’ve heard every conceivable stereotype, joke and assumption about the concept of plant-based living. Perhaps I should dedicate an entire article about these- I could even write a book, but today I’m going to share a recipe instead.
A late summer smoothie made with coconut yoghurt, pineapple pumpkin and green apples. A little bit of summer and a little bit of autumn, combined in a glass.
I’m a firm believer that the only way to change the world is to change your perspective. And change your own lifestyle towards a more sustainable, realistic and meaningful direction. So, there is not going to be a lecture on how veganism is the way to go. Just a lovely recipe to bring a smile to your face.
Serves: 2 Prep Time: 5 minutes
Ingredients
1 pineapple, cut into bite-sized pieces and frozen
1/2 cup coconut yoghurt
1 green apple
1/2 cup pumpkin puree
2 tablespoons maple syrup
1/4 cup almond milk
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice
Optional: 1 cup ice and cinnamon sticks to garnish
Instructions
Combine all the ingredients in a food processor or blender and process until smooth and creamy.
Pour into your serving glasses and serve immediately.
