I have never been a big fan of tofu, until I made this hot and sour Chinese tofu soup, among other tofu recipes. I was asked to develop a large number of Chinese recipes for a client and I had to do some research in order to provide authentic and appealing Chinese dishes that would taste as good as they look. I tried different brands and I came to the conclusion that extra firm tofu is the way to go, especially when it comes to soups and stews. I experimented a lot and I developed more than 100 recipes.
This one is my favourite.
Hot and Sour Chinese Tofu Soup

Prep time: 10 mins
Cooking time: 15 mins
INGREDIENTS
1 1/4 cup firm tofu
1 cup Jasmine rice
1 cup shiitake mushrooms
1 cup frozen beans and carrots
1 cup bean sprouts
3 cups vegetable broth
juice of 1 lime
2 tsp sesame oil
1 tbsp vegetable oil
1 pinch chilli flakes
1 pinch sea salt
METHOD
1 Steam the rice according to packaging instructions.
2 Chop the tofu into chunks. Heat the vegetable oil in a saucepan and saute for 5 minutes with the vegetables.
3 Add the broth, and enough water to cover the ingredients and cook for 10 minutes. Add the chili and lime.
4 Serve the soup hot, drizzled with sesame oil, and rice on the side.
